The grapes are harvested not when they are ripe, but actually when they are over-ripe to the point that they might look difficult to be harvested. Delicate skin maceration and fermentation, followed by batonnage on lees for 1 year. The wine is then aged for 14 years in barrels, which are not entirely filled but a layer of air space is left in them to help the wine reach its perfect balance (“a botte scolma” barrel method). Bottled at end-January 2018 directly from the barrels. Aging: 14 years in oak barrel not completely full of 6 hectolitres.
