Soil: Clay–limestone–pebbles Climate: Mediterranean 250 to 300 on altitude Surface area : 2,5 ha Yield: between 25 and 30 hl/ha Harvest: Manual Vinification : Rigorous sorting, low pressure pressing, fermentation in cement, maturation on fine lies. Bottling: light filtration which use low sulfite in order to preserve the natural balance. Service: between 13 to 14°C open the bottle 1 hour in advance or to decant
