Alcohol: 12.5% Tasting Note: A profound and serene wine. The texture of corduroy. Refined tannins. The triumph of skin-contact. Best served in a carafe and brought up to temperature. Macerated for four days without temperature control and fermented with native yeasts. This allowed the wine to extract the maximum of natural substances present in its skins, ensuring a strong natural stability. The wine is an intense amber colour with brilliant opacity. This is also the consequence of no-filtering approach. After pressing the wine is transferred into big oak barrels, where is remains for two years. During this period, the wine carries out a natural malolactic fermentation.

Our farm has been making wine for over 200 years. We are organic certified since 2005, the vineyards occupy 7 hectares and we have 5 varieties (3 autochthonous). Our work bases on raising natural resistance of plants, yields are low for extracting the best possible quality from the grapes. The result are natural wines which are not filtered, are not temperature-controled, nothing is added to wines exept a small quantity of sulphur, so as to keep natural harmony that only nature is able to give. After the maceration (3-7 days whites and 10-14 days red), the wines wait for 2 years in big barrels before the bottling and atleast another 3 years before they go to the market. We believe in connection of everything with everything and as a consequence we try to respect the natural laws which we encounter every day. What nature creates is unique and in its wholeness it is perfect. All we have to do is to ”raise” the wine and let it mature and so fulfill its mission.
