Our year of wine tastings with international natural wine stars at Stanley's continues next Tuesday with Stefan Wellanschitz of Kolfok. We've been huge fans of Stefan's wine for years, as he represents what we believe is a compelling future for Austrian wines.

Kolfok, roughly translated as “unconventional thinker” in regional dialect, is an apt term to describe winemaker Stefan and his mission. His vision was to make wines in a more natural and transparent way, highlighting the terroir of Mittelburgenland, Austria with its varied mix of alpine soils.

To achieve a non-interventionist style of winemaking, Stefan farms organically and biodynamically and allows other herbs and plants to grow among the vines. In the cellar, he uses gravity instead of pumps and only adds sulfur minimally at bottling. His aim is to let the wine “become” rather than “be made,” and to create wines that unmistakably communicate their origin. These wines are vibrant, alive, and speak to the unique intersection of cultures and soils that make this region of Austria so special.
