My Vision, My Col Fondo Wines

Every bottle stems from my passion for the land and the authenticity of unfiltered wine. My journey began over fifteen years ago with Zanotto Col Fondo, a natural sparkling wine among the first of its kind. Back then, it was called “sur lie” – in Italian “sui lieviti” – but with fellow visionaries, I revived “Col Fondo,” a Venetian dialect term now synonymous with tradition and true flavor. This Col Fondo wine comes alive in the bottle: refermentation on native yeasts creates a living lees sediment, enriching each rustic, fresh sip, sealed with a crown cap.

From the Veneto hills, I select unique grapes to craft diverse experiences: intense whites, a rare red Col Fondo, deep macerated orange wines, and an elegant rosé. These artisanal wines, shaped by the land and my hands, are perfect for those seeking raw, ancient flavors—a journey to enjoy with simple dishes or moments of discovery.

La mia visione, i miei vini Col Fondo

Ogni bottiglia nasce dalla mia passione per la terra e per l’autenticità del vino non filtrato. Il mio percorso è iniziato oltre quindici anni fa con Zanotto Col Fondo, un vino spumante naturale tra i primi del suo genere. All’epoca era chiamato “sur lie” – in italiano “sui lieviti” – ma insieme ad altri visionari ho riportato in vita il termine “Col Fondo”, espressione del dialetto veneto oggi sinonimo di tradizione e gusto autentico. Questo vino Col Fondo prende vita in bottiglia: la rifermentazione sui lieviti indigeni crea un sedimento vivo di fecce fini che arricchisce ogni sorso rustico e fresco, sigillato con tappo a corona.

Dalle colline del Veneto seleziono uve uniche per creare esperienze diverse: bianchi intensi, un raro Col Fondo rosso, profondi vini orange macerati e un elegante rosé. Questi vini artigianali, plasmati dalla terra e dalle mie mani, sono perfetti per chi cerca sapori autentici e antichi—un viaggio da gustare con piatti semplici o in momenti di scoperta.
