After years of learning viticulture and winemaking in both hemispheres, we decided to create a vineyard in Poland. As crazy as it sounds, we’ve found a perfect spot with a great microclimate where we can make our wines just as we like them, with no appellation constraints. We created a certified organic farm, cultivated in a biodynamic way, featuring an orchard with only old varieties of fruit trees and the only vineyard in the country with no hybrids.
Our plants—Chardonnay, Riesling, Sauvignon Blanc, Pinot Gris, Pinot Noir, and Merlot (probably the northernmost Merlot in the world, as we are almost exactly at the 50th parallel)—were multiplied by ourselves from "sticks" we brought from other organic vineyards run by our friends all across Europe. We like their wines, we know their vineyards, and we chose the most resistant plants (massal selection). It was a wonderful opportunity to create a vineyard with many clones of the same varieties and keep biodiversity as high as possible.
It didn't stop there. For ages, we had a dream of seeing how vines used to behave in pre-phylloxera times, and the decision to create a vineyard in Poland made it possible. :)
In 2020, we decided not to use copper in our vineyard and orchard if at all possible. So far, it works; we had to do it just once last year. 🙂 We produce our wines and ciders using only wild yeasts and without any sugar or acidity corrections (we have an obsession with optimal ripeness, which requires a very low crop). We don’t use any fining agents. We produce sparkling and still wines—white, rosé, and red—as well as amber wines.
