I am a tiny scale producer (2ha) in and around Dresden, Saxony. Most of the vines here are around 40 years old and planted on weathered granite, which is pretty common in the area, if a bit unique for Germany at large. Farming is organic in respect of surrounding biodiversity above and under ground. We work principally manually and reduce mechanical or motorized machines to a very minimum as for example for mulch. Fertilization comes only from own compost and mulch from naturally grown flora once a year / maximum twice in humid vintages. We work on 4 vineyards between 0,2 ha and 1,2 ha on a scale of about 20 km. As per the winemaking all the ferments are spontaneous. The wines are unfiltered and sulfured slightly only at bottling if needed or wanted. All wines are so called field blend cuvées - 5 wines of each colour - made with the intention to create very individual "personalities". Still they're unmistakebly all from one family. Terroir with all it's uncountable facettes and vinifiation style tell one story through all our wines from different perspectives. Tausendsassa, Kesse Comtesse, Marquis von Momue, Madame Klim Bim & Sacrebleu all had time to develop in vessels for 20 months and are bottled at the same time via gravitation, so no pump involved. The total amount of bottling per year is between 3800 and 4500 bottles in total. It's all due to severe reduction of intrants such as fertilizer or oxygen in the soil by avoiding tillage. The effect is a naturally decrease of the crop, soils are getting poorer in the perspective of short term nutrition avalability and better in it's waterkeeping capacity. Long term nutrition availability is activated by healthy and not disturbed flora and fauna. The soil is getting more "real" and the vines are getting stronger - not so pampered !
