Vinochisti: Don't follow the rules, ferment them. A unique exploration of indigenous Italian grape varieties since 2006 Vinochisti is a garage winery, based in Tuscany, creating wines from the wealth of indigenous Italian grape varieties. Vinochisti has no vineyards to call its own but instead chooses to work closely with grape growers throughout Italy to carefully source grapes; Italy as one big vineyard. The wines produced champion the unlimited potential of Italy's viticultural heritage through extended maceration reds, skin contact whites and long, long ageing in barrel and cement. There is no adherence to the rules and regulations of region and denomination, with each wine proudly bottled as Vino da Tavola.
