Uva - Mathilde and Pablo

Some people are destined to become farmers and have their path all mapped out. For Mathilde and Pablo, a young creative couple and serious globetrotters, it is not so. Restaurateurs and lovers of natural wine affected by Covid, this couple was looking for a way out. What better place to escape than a vineyard, especially if you are not afraid to work hard with your hands?

 

In 2019, they acquired a vineyard near St-Chinian and started to make wine. The project ''les Volatiles'' was born. Following a stimulating vintage, they decided to create Uva, an urban winery. This is where they will be able to experiment as winemakers, while offering direct sales of their wines and regular tasting events.

 

As they arrive on the natural wine scene today, they are brimming with enthusiasm and a smile that will carry them a long way. They have recently recovered a hectare of Carignan in the area and they also harvest from local colleagues.

At the winery they make pure wines, only from organic grapes that ferment naturally without filtration and without any additives.

 

We are delighted to count them among the Languedoc wine scene as well as the nightlife of Sète. Because it is during the winter, when the wines are aging, that they animate the streets with the gastronomic past of Mathilde and the musical past of Pablo.
