Rémi Thebault is a new winegrower from Le Loroux Bottereau in the Muscadet region, with 9ha of organic vines who will be setting up in 2022. After a former life as an agricultural technician and 5 years training with various winemakers, particularly from the Lot and Muscadet regions, it was thanks to the collective that his project came to fruition! Thanks to a shared cellar with Atelier7, crowdfunding supported by Raisin and citizen participatory financing. With Melon B., Folle Blanche and Cabernet Franc, on sandy-loam and silty-clay soils, different terroirs such as Orthogneiss, Serpentinite and Gneiss, he's looking for his winemaker's "touch" by working these grape varieties differently. Keeping the traditional techniques of the appellation and battoner, vinifying entirely in barrels, short macerations and ageing on lees; he keeps the old and brings in the "new"! Physiological pruning that respects the flow of sap, gentle shallow tillage with regular passes. The aim is to have as healthy a harvest as possible to optimize vinification possibilities!
