we are a micro wine-growing reality in Lazio, which follows an agronomic approach according to the dictates of biodynamics. Our main grape variety is Cesanese, a red grape that we produce in the Olevano Romano vineyards, but we also produce a white wine, Passerina del Frusinate We use spontaneous fermentations and natural malolactic fermentation and we add a very low quantity on sulphites during bottling. We believe that wine needs long refinement, therefore our wines age for at least two years, of which one in the bottle. For red wine we prefer large oak barrels that are not first used but exhausted, while for white wine we prefer steel containers, although we are also experimenting with acacia tonneaux
