The philosophies we follow for The Farm Wines translate in an organic way to RR81. Our estate vineyard has been farmed organically from planting in 2000 and any growers we work with we trust and share the same sustainable and organic approach to viticulture - no herbicides, no irrigation, low yields, all canopy management done by hand. All fruit is hand picked at harvest and hand sorted before entering the winery for the beginning of its journey. Fermentation is natural wild ferment from indigenous yeast from the vineyard it came from, often starting a peid-du-cuve in the vineyard first. All wines go through primary fermentation until they are sugar dry and complete MLF without the addition of bacteria. Wines are bottled without any additives and unfiltered. All wines are tested for Free and Total Sulphur and interestingly enough so have small measurable amounts of free and total S02, providing proof that even without the addition of KMS, S02 is a natural bi-product of fermentation. We want our wines to have a pure expression without adds or ego. It’s all about the wine.
