We work organic certified (ecocert) minimally invasive: on steep old terraced vineyards with old vines planted between 1949 and 1963, the youngest vineyard in 1993) by limiting our treatments in the vineyard to bicarbonate and sulfur - right: NO COPPER in the vineyard since 2014. In the cellar grapes only find their way into our barrels (mostly INOX, few barriques) strictly renouncing any additives. The vast majority of wines ripen for at least 12 months on the skins - without any racking. Partially considerably longer. Our yields for the lines OISEAU REBELLE and P'TIT REBELLE are always below 10hl/ha, for the line LES BECS SALÉS - for which we buy organic certified grapes of the region - below 25hl/ha. We love our unique terroir of meta-sedimentary schist, over 2000 hours of sunshine each year and our best friend - the TRAMONTANE (strong northerly wind) which has allowed viticulture for over 1700 years and thus gives the term tradition a dimension far beyond any appellation and its regulations known today. In this sense we are keepers of tradition: full of respect and globally inspired.
