The Principle Sake with the rich taste of rice which we can appreciate ourselves. Shizen-mai*1 100%, Junmai*2 100% and Kimoto*3 100% *1 Shizen-mai is naturally grown rice without pesticides and chemical fertilizers *2 Junmai literally means “pure rice sake without added alcohol” *3 Kimoto is the traditional method of sake starter-making without artificial lactic acid. The process of kimoto-making has an added step of “motosuri” (grinding of rice and koji)
