Niida Honke: Crafting the Future of Sake through Regenerative Agriculture Established in 1711 in Fukushima, Niida Honke is a pioneer in the world of natural sake. As the first brewery in Japan to achieve Regenerative Organic (RO) Certification, we are committed to brewing that heals the soil and restores the ecosystem. Our partnership with Patagonia Provisions reflects our shared mission to use food and drink as a tool for environmental change. Our signature brand, "Niida Shizenshu," is the embodiment of "low-intervention" brewing. We use only 100% naturally grown rice (pesticide-free and chemical-free) from our own fields. In the cellar, we embrace traditional Kimoto methods, relying exclusively on indigenous/ambient yeasts—no cultivated yeast is ever added. We go beyond the bottle to protect our landscape. We manage our own mountains and hand-build our fermentation vats (Kioke) using cedar thinned from our own forests. This "closed-loop" approach, from the soil to the wood, makes Niida Honke a unique presence in Japan's brewing history. We invite you to taste the true soul of Fukushima’s terroir.
