Limoux Located in the South of France, in the Languedoc Roussillon region, the Limoux appellation is the only appellation in the South known for its white and sparkling wines. Perched on the foothills of the Pyrenees she benefits from the fresh mountain winds that brings the all-important cool for white wines. Characterized by its iconic grape Mauzac, Limoux claims the name Blanquette since 1531. A few years later the arrival of Chenin and Chardonnay we helped develop the crémant, then quiet white wines. Some limouxins proud of their heritage and historical documents that support says that it is close to Limoux in the Abbey of St Hilaire first effervescent wine in the world was produced. Later Don Pérignon would have copied the recipe to create the Champagne. Not being historian and view at least three other denominations fighting the paternity of effervescent wines, I leave you the choice of the origins of the bubble. Monsieur S Cooperative winegrower’s son, I could pretty much said I was born in the vineyards. It is in 2011 at the age of 23 years, I decided to recover a part of the family estate to produce my own sparkling wines. Out of respect for, my clients, my land and my possible future offspring, I now decide to work in bio with the minimum of input in the vineyards and the wine. Bouriège located between 400 and 550 meters of altitude, my field is located on the cooler terroirs and the highest of Limoux. Benefit from very deep clay-limestone soil, the vines never suffer droughts and retain all the freshness of the wine. I grow on the field on the Mauzac grape native to make Blanquette, Chardonnay and Chenin for my crémant and white, the Pinot noir for the crémant Rosé, and Syrah for my red wine. Order to express at best my terroir my wines are glued, or filtered, the addition of SO2 is reduced to a minimum, nor fermentations are naturally, without added yeasts.
