Limoux Located in the South of France, in the Languedoc Roussillon region, the Limoux appellation is the only appellation in the South known for its white and sparkling wines. Perched on the foothills of the Pyrenees she benefits from the fresh mountain winds that brings the all-important cool for white wines. Characterized by its iconic grape Mauzac, Limoux claims the name Blanquette since 1531. A few years later the arrival of Chenin and Chardonnay we helped develop the crémant, then quiet white wines. Some limouxins proud of their heritage and historical documents that support says that it is close to Limoux in the Abbey of St Hilaire first effervescent wine in the world was produced. Later Don Pérignon would have copied the recipe to create the Champagne. Benefit from very deep clay-limestone soil, the vines never suffer droughts and retain all the freshness of the wine. I grow on the field on the Mauzac grape native to make Blanquette, Chardonnay and Chenin for my crémant and white, the Pinot noir for the crémant Rosé, and Syrah for my red wine. Order to express at best my terroir my wines are glued, or filtered, the addition of SO2 is reduced to a minimum, nor fermentations are naturally, without added yeasts.
