We make small batches of cider using crab-apples and apples from abandoned and unsprayed orchards in southern Quebec. We ferment slowly using the cold of our harsh winters to tire out our yeasts until we have just enough residual sugars for taste and carbonation. We love our apples and we love making traditional ciders!
