“We return to this mountain made of ophiolite stone (ophis/ophio - shake), the mountain that remains a light in our hearts since we first encountered it.” Michael and Dafni, in 2018, decided to leave city life behind and reestablish their lives, along with their four children, on the land they inherited from their family. Their goal is to live in symbiosis with the mountain, expressing it and being expressed through it.

 At 1300 meters, in the center of Cyprus, Ktima Dymatou, from the Savva family, is  gradually coming to life. Located above Dymes village in the Pitsilia region, the land is covered with steep slopes and centuries-old stone terraces. The Troodos Mountains are made of ophiolite stone, with lavas rich in iron and magnesium, raised from the ocean floor by complex plate tectonic movements. The Troodos ophiolite is unique in the world for its completeness and its complete exposure at the surface.

We first introduce biodynamic farming practices to our ktima in 2022. Our farm has been certified organic since 2019, and as of June of 2024, we are in the process of becoming Demeter- certified. We will soon be the first certified biodynamic farm in Cyprus. 

Light dominates; the earth lives under the biodynamic management. The concept of the agricultural organismtakes shape, thanks to the coexistence of vineyards, orchards, vegetables gardens, forests, sheep, chickens, wildlife, green manure, spontaneous wild flora, and our involvement as farmers who listen to and work with nature. Biodiversity enriches the land, creating a perfect balance.

Everything is different compared to the modernity we are used to. 6000 years of history, our vineyards continue to planted with ungrafted vines, without American rootstock. We work exclusively with indigenous ancient varieties: Giannoudi, Mavro, Xynisteri, Morokanella, Vasilissa, Promara and Spourtiko.

Through the use of organic matter and biodynamic preparations, we rehabilitate the humus in the soil. This results in stronger and more expressive plants, grapes capable of fermenting independently without further enological additives.

We produce naturally; nothing is added  and nothing is removed. We use only grapes grown in our vineyards. The harvest is done by hand, selecting the best grapes. Fermendation occurs spontaneously with indigenous yeasts. We accompany the wine in its evolution in containers like amphorae that respect its vitality, without filtering, clarifying and controlling the temperature. We make wines that express our mountain, our indigenous ancient varieties, our Ktima our unique living organism where each part nurtures the other: humans, plants, animals, and soil trive together.

Our wines:

·      METAMORPHOSIS 2023 this cru is from ungrafted vines of Giannoudi and some Grapes of Mavro that still exist on the slope of Ktima cultivated according Steiner Biodynamic method.

·      AMPELI 2023 this cru is from ungrafted vines of Xynisteri, Vasilissa, Morokanella cultivated according Steiner Biodynamic method.

We also offer apple cider, apple juice, fresh apples from our orchard, tomato sauce and fresh vegetables from our vegetable gardens, and our first cheeses from our sheep. Our aim is to preserve the natural characteristics of each product.
