The winery exists since 1905, but I took over from my father in 2019. We have 11 hectares of land, of which 7 hectares are vineyard, and 4 hectares are trees and biodiversity. All of the vineyard is farmed organically since 2019, and certified since 2024. We also started working biodynamically that year, but were lacking resources and time, so we have been adding more and more biodynamic practices since then, and now fully comply with the Demeter requirements. We consider asking for the certification next year. Most importantly, the term I prefer to use to describe our philosophy is "low intervention" or minimal intervention. We do not use any additive except a bit of sulfites, whenever we think it is necessary (and never before the end of malolactic fermentation) and we give the wines time without manipulating them, so as few soutirages as possible, no fining, no filtration. We use oak to age some of our wines but we are very careful in the selection of barrels that do not influence the wine aromas too much.
