Domaine Guillemot-Michel

Domaine Guillemot-Michel is a small, family estate, situated in “Quintaine” right in between the villages of Viré and Clessé in the heart of the appellation “Viré-Clessé”. We cultivate Chardonnay and a few heirloom grapes on our 6,5ha vineyard located within walking distance of the family house. The estate is organic since the beginning of the 80’s and certified Biodynamic since 1992. We focus on self-sustainability, producing our own biodynamic preparations, growing and harvesting our own herbs for infusions, manures, etc. We produce 3 white wine, a sparkling and spirits. We are the last Burgundy estate distilling our own spirits. We distillate our Marc and Fine de Bourgogne in two, old, wood-fired, copper stills. The white spirits are aged in used white wine barrels and bottled when ready. No filtration, no pumping, no additive except for rain water.
