At Domaine des Moriers, organic farming has restored the vitality of the plots.
A return to common sense: trusting the natural immunity of plants, and relying on diligent helpers like micro-fungi and pollinators. Favoring horse-drawn plowing, encouraging soil aeration to develop the root network. As you walk across these hectares, you’ll see bursts of color—flowers that shelter their rightful inhabitants: ladybugs, grasshoppers, butterflies, and of course, the occasional passing hare.
By allowing the vine to express itself, each of our crus is free to reveal its unique character. The philosophy of the past does not exclude the tools or teachings of the present. Our bottles are shaped by techniques, experience, and the experiments of generations of winemakers. From the vineyard’s exposure and mineral composition, to careful pressing, and barrel aging where each cask is individually monitored—even down to decisions about separating the lees based on the interpretation of the cru, refining through wood contact or maturing in vats.
It’s not only wine that improves with time—this know-how is also the fruit of a region learned over the years. Since the release of our first vintage in 2005, five crus have been patiently developed. Because we aim to bring out the very best of what Beaujolais can offer, because we want to be among its strongest advocates, we move at a pace measured not in hours, barely even in seasons. Our progress—our Ecocert certification, the awards we’ve won—supports our approach and the care we give to flavor. Each harvest is driven by the same pursuit, the same high standards in the cellar. We will persevere until that remarkable, moving moment: when the wine confirms, on the palate, that it is worthy of being served at your table.
