Domaine de l'Ausseil

Domaine de l'Ausseil was created in 2001, with both old vines and young vines in Latour de France, Roussillon. Ausseil means "bird" in occitan. I produce around 10 different cuvees, whites, rosé, reds and natural sweet wines.A lot of work at the vineyard, and as little as possible in the cellar. I'd like to make wines that look like the terroir, not the winemaker.
