At the confluence of Mediterranean and Oceanic climates, on a small limestone plateau 300 metres above sea level between the Pyrenees and the Massif Central, lies the Cantalauze estate with 9 hectares of vineyard. In Gaillac, we cultivate biodiversity, soil life, and tailor-made vine management. Since 1982, we have practiced global and ecological organic agriculture. All our wines are crafted from estate-grown grapes and harvested entirely by hand, with spontaneous fermentations carried out by indigenous yeasts.
The previous generation, Guy and Brigitte Laurent, pioneers of organic viticulture, vinified under the Nature & Progrès label. Pierre-Olivier and I met while studying agricultural engineering and after diverse experiences worldwide, we returned to Cantalauze in 2014, inheriting both a project and a philosophy: sharing wine, reviving biodiversity, and honoring the history of this place. Since 2014, we have diversified grape varieties and renovated the cellar, whose limestone walls provide ideal winemaking conditions. We cultivate the land with autonomy and coherence, using only natural materials for storage, recycled labels, and beeswax corks. Soil management respects horizons, compost nourishes naturally, and vine height and pruning are adapted to allow airflow, sun exposure, and ease of harvest.
All stages of winemaking receive daily attention: grapes are hand-picked, pressed carefully, fermented spontaneously, and aged in barrels, amphorae, or stoneware. Natural sparkling wines complete fermentation in bottle and are manually disgorged. The result is wines that reveal the terroir and vintage, with varietals including Mauzac, Ondenc, Loin de l’Œil, Braucol, Duras, Syrah, and Prunelart.
Cantalauze—“Song of the Lark”—reflects the estate’s spirit, where the lark, symbol of good omen and harmony between earth and sky, still finds refuge among the vineyards.
