We cultivate our vines in organic farming to respect the soil and nature. The vines are planted on 4 different terroirs only 2 km away on a dominant basis of Orthogneiss, mother rock present on part of the edges of Sèvre. Our terroirs are declined according to orientations and geological faults. We work 3 grape varieties, Melon de Bourgogne (8 ha), Folle Blanche (0.68 ha) in the town of La Haye-Fouassière, and Gamay (0.60 ha). In the cellar, we work in continuity with what we feel about the vine. Everything is harvested by hand and sorted strictly to obtain a quality juice so that the fermentation can take place naturally, without additives. After the lactic and malolactic fermentations, in accordance with our convictions and the needs of the wines, we can add sulphites (maximum 40mg / l total). We follow the lunar calendar as much as possible for winemaking operations. We like the diversity of grape varieties and winemaking methods, the cellar is thus our “playground”, which is why we produce 9 vintages.
