Cydr Dwaj Bracia is a Polish micro-cidery founded in 2021 by the Tenderenda brothers. Their production philosophy is based on locality and craftsmanship. They hand-pick apples together with friends, experimenting with blending different varieties, focusing primarily on heritage cultivars. They do not filter or pasteurize the cider, nor do they add sulfites, coloring, or preservatives. They allow it to ferment slowly at low temperatures and finally referment it in bottles so that it becomes dry and gently sparkling. “We experiment a lot and meticulously record the results and conclusions. We love classic dry cider, but we are delighted whenever, through the spontaneous fermentation, or using different yeasts or by the addition of flowers, honey, resin, herbs, or fruit, we can draw out new flavors without overwhelming the cider base.” It is very important to them that they create and sell a product made locally—one that does not need to travel thousands of kilometers to bring joy; that they give new life to old orchards; that they produce naturally and from natural ingredients; and that they never have to compromise on quality. Whenever possible, they also deliver their cider by bicycle (Tadek built a special trailer that can hold 12 boxes). Every year they try to produce several different ciders. Sometimes they are even forced to if a particular apple variety yields poorly. They strive to make their ciders contrasting so that one can choose whether they want wild-yeast cider, or something drier, more acidic, more delicate, more floral, closer to Spanish-style ciders, or perhaps something entirely new—like a cider inspired by Greek retsina, with the addition of resin. The inspiration to start the cidery came from their shared passion for cider and the desire to create something together. After numerous travels, during which they discovered the rich flavors of Irish, English, and French ciders, they decided to explore what could be made from old local apple varieties.
