I started Cormorant Cellars in 2018. I was at a point in my career when it was time to go out on my own and make the wines I truly wanted to craft. It was time to free myself and go in a direction without the crutches of conventional winemaking. Cormorant is full of art and old techniques of traditional winemaking. I decided to focus on Sauvignon Blanc for my first few vintages, as it has always been one of my favorite varieties. My Sauvignon Blanc comes from Organic grapes, which I press into small drums and a few barrels to ferment with the yeast that arrives on the grapes. The wine is aged sur lies to give it mouthfeel and natural stability. My hope for Cormorant Cellars is to show the deep connection between the farmer in the vineyard and my winemaking in the cellar.
