photo by @Benjaminmacmahon Colombaia is not just a vineyard but an entire ecosystem of grapes, animals, vegetables and fruit all living in symbiosis with, and feeding into, each other. Colombaia means ‘dovecot’ and this is a distinguishing feature of the 16th century farmhouse whose estate sits 220 metres up on the Colle Val d’Elsa, on clay soil rich in entire fossils and just 60km from the sea. Microclima is also very special, sea wind breeze always in late afternoon give some freshness to the soil, so to the wine, with some notes of salt and exaltation of flavours. Each year, the vinification adapts in respect to the vintage. However, some things are constants: spontaneous fermentation using indigenous yeasts, no fining, no filtering, no additives other than, occasionally, a tiny amount of sulphur at bottling. Each year, as the impact of weather change the ratio of the grapes, so does the label – a synaesthetic representation of the vintage as a colour. For all the wines: Certify Organic, Biodynamic Demeter Vegan, Natural Wines are vinify from the 2 parcel separately: the Vigna vecchia 55 year old, and the Vigna nuova 16 year old. Member of: Renaissance des Appellation , AVN Association Vin naturel France, Certify Organic Suolo&Salute from 1999 and Demeter from 2007.
