Rooted in the village of Frelighsburg, in the Eastern Townships, our family orchard has been growing traditional apples for about 40 years. With the help of his spouse Alexa, Gabriel Choinière decided to go beyond the simple ''biting apple'' and embark on the development of unique and natural farm ciders on the family land. Seeking for tannins and complexity, we love to forage and work with wild apples as well. After a few years of experimentation and in parallel with the conversion of the estate to organic farming, our first vintage was made in 2018. Focusing on indigenous yeasts and natural effervescence, our sparkling ciders, unfiltered and without dosage, are marked by our terroir, its authenticity and uniqueness. Channeling what nature has to offer into simple, quality ciders is a reflection of our vision of agriculture and has become our way of life.
