Château Acid is Simon Jones and Charles O’Brien, two old friends originally from Sydney. After seperate careers in music in their 20s, they joined creative forces in their 30s to embark on their winemaking journey. Since 2017, they have been refining their craft - dedicated to bottling wines of the highest standard. Their combined passion is centred around pure, non-interventionist wines of place; living wines delivering drive and vitality.

 

Château Acid is vinified with fruit from a single biodynamic and certified organic vineyard in Canowindra, nestled in the Central Ranges of New South Wales, Australia. They make Vermentino, Chardonnay, Shiraz and Grenache from this 10 hectare block using a range of vessels from amphorae to large format old French oak barrels.

 

All of their fruit is hand picked and transported to their cellar, where they process, age and bottle the wines. They work with minimal intervention in celebration of the beautiful fruit they work with and the pristine site that it grows on; all wines are made without fining, filtration or additions aside from up to 30ppm sulfur when required.

 

Each bottle displays a definite attention to detail, the thirst for knowledge and devotion to quality is evident. Simon and Charles are deeply engaged in the process, with a relentless ambition to make joyful wines that have you reaching for the next glass.
