ENDEMIC is more than an ordinary wine project. It was born from a family (Ferrer-Gallego), with at least a legacy of four generations, that with great attachment and uninterruptedly cultivates the vine in the village of Jaraguas - municipality of Venta del Moro. The vineyard is located within the protected natural area "Parque Natural de las Hoces del Cabriel" (biosphere reserve). Since the year 2012 and with the beginning of the project is that in this enclave is that approximately 3 hectares of plots from a dry vineyard of 12 hectares are selected; in some cases more than centenarians. Vineyards that by agronomic singularity and enological expression achieve (in our opinion) well value the context and the way in which they are worked. The concept of agro-cultural conservation (of which we believe we are creators and followers) suggests to us that the good adaptation and longevity of our vineyards is due, on the one hand, to the continuity (without surprises) and wisdom of traditional agronomic practices. On the other hand, it is also due to the activities for the creation of nuclei of enrichment, maintenance and respect for biodiversity that have been developed in recent years. Vineyards intervened with observation and study, as well as viticultural work based on low yields have allowed these vineyards to acquire strengths and give us the possibility of not being treated with any chemical products. Undoubtedly the commitment and the union of people in this conception has been fundamental. The three brothers (Miguel Ángel, Pablo and Raúl), who have been involved in the vineyard from an early age, form the pillars. At the winemaking level, the idea is to maintain consistency while respecting the richness that comes from the vineyard, where the amount of additives and preservatives used is zero. The latter not as a last minute whim, but rather as an act of trust in the health, the intrinsic protection that gives us the concentrated grape, worked meticulously and learning year after year. The elaborations are guided and controlled; carrying out fermentations that with the help of local microbiology give us interesting and convincing results to continue improving. The profile of the wines is necessarily intense enough to be enjoyed and always respecting the characteristics of the vintage. Our elaborations always close to the grape and close to nature are, in the opinion of some of our consumers, appetizing and of good digestibility. Without going into organoleptic evaluations, for us this is a fundamental characteristic. We want our wines to play their part in the place where wine is at its best: accompanying people who are ready to enjoy good food and to meet at the table. Two different wines are produced every year for a total of five thousand bottles certified in organic farming. They are aged in new wood and up to four years of different sizes according to the balance to be respected in each elaboration. A third wine exists; the result of a striking, particular and above all revealing expression for the project, which is bottled in some exceptional years. For the moment only the 2019 vintage and the 2022 vintage; both of excellent quality and in a confidential number of bottles. In addition to the two wines that are produced on a regular basis, we would be delighted if you have the opportunity to taste this latest wine, just bottled a couple of weeks ago through a process of vinification entirely by gravity; a wine that seems to us to be of great elegance and energy, we believe of lovely balance.
