ARENSBAK - Non-Alcoholic proxy wines from Copenhagen

ARENSBAK has deep roots in Copenhagen and originates from the city’s gastronomic scene and its commitment to culinary innovation, the celebration of local flavors and the New Nordic movement. We have created a tasteful and complex experience without alcohol building flavors from the ground up and pushing the boundaries of flavors through fermentation. The fine drops of ARENSBAK are crafted by sommelier Emilie Øst-Jacobsen and gastrophysicist Bram Kerkhof.

ARENSBAK is crafted without any compromises to taste. We use science, fermentation and non-traditional ingredients to craft the vinous taste complexity. The natural tannins and dryness derive from our carefully selected teas and by layering with oak. 

Rawness & complexity known from natural wine

The drops of ARENSBAK are double fermented resulting in a tasteful fermented flavor infused with whole botanicals and natural raw ingredients. A delicious non alcoholic wine alternative created without any compromises to taste.

Blossoming tea-artistry

Tea is the foundation of ARENSBAK. All of our proxies are created on a base of fermented tea. Similar to grapes used in traditional wine, tea contains acids and tannins that are naturally present in the leaves and give structure and body.

Deep roots create exceptional terroir
Our tea leaves are handpicked from trees, not bushes. The roots of the tea trees extend deep into the soil, and the terroir of the tea treas imparts unique regional characteristics and a rich flavor profile.

Double fermented

We take fermentation seriously. And ARENSBAK is double fermented.

Mother Scoby
In the first fermentation kombucha is created on a base of our selected teas. And here the scoby is the ‘mother’ that initiates the fermentation process consuming the sugar in the tea and creating organic acids and carbon dioxide resulting in a sophisticated fermented flavor.

Building flavors with whole botanicals
In the second fermentation flavors are layered to enhance the complexity and taste of ARENSBAK. We work with whole botanicals and infuse the kombucha with the best natural ingredients.

ARENSBAK is perfect to be enjoyed with food. It is crafted to elevate the culinary experience.
 The choice of tea, fermentation techniques, ingredients and preserving are all crucial elements in developing the natural tannins, body and acidity found in ARENSBAK. As a result, you get the long, round aftertaste and a well-balanced dryness - perfect for the dining experience and a great alcohol free wine substitute. ARENSBAK is now served around 18 Michelin restaurants in Europe and more to come..
