La Ruche Ivre is a project of Ballot-Flurin Apiculteurs, a pioneer in low-impact and conscious beekeeping. It began as a collaboration between beekeeper Remi Ballot from South West France, and Canadian fermentation specialist Andrew Tape. After meeting at a local village fête, they decided to try their hand at making meads from raw and pre-fermented honeys. Finding that their experiments (thankfully) tasted nothing like the meads traditionally found in France, the boys launched themselves into creating and defining methods for mead-specific biodynamic and natural fermentation, in pursuit of the unique and flavors hidden in honey. Several years on, they have developed a selection of natural, sparkling meads, made from the purest French honeys, that truly showcase the vast and unknown universe of this ancient drink.
