The company started by the end of 2020, we are 5 egalitarian partners, including Roberto, and are dedicated in making ciders and spirits (and other experimental stuff). In the cider side of things we advocate to get our fruit from really small farmers, dry farmed that are in the same area from where Roberto gets his grapes, the bio-bio valley. These farmers would have between 8 and 20 trees each, all planted a couple generations ago and with a traditional management, i.e. very high trees with minimun pruning and fertilization, if any. Our method of production for all ciders is through wild fermentation in used oak barrels, that are bottled before fermentation is finished, so there are no additives at all, the sugar that makes the cider sparkling comes from the same apple; then the bottles are let to rest during winter time and are disgorged during the spring and summer, so the ciders although bit hazy, are quite clear.
