Weinschloss Malatschek is a 11 generation winery, with its roots going back to medieval times produces 7-9 very old, traditional german single 'variety' wines. The vineyards are grown and nursed strictly ecologically. Although it is not organic certified, there is strong emphasis is on the 'esprit de corps' of the winemaker old tradition. The wine making process is all without blocking the malolactic fermentation. Mr. Malattschek says, the wine is made with almost no intervention, with putting as less as possible of his EGO in them. In Malatschek winery the wine is made by the God, the humans are only for keeping the hygiene and the storage. All wines are made by proprietary traditional Royal and Grand Spontan mastery. SO2 is used only for casks when they are emptied. The wine takes only as much SO2 as it needs. The wine is grown on 1 hectare of mountain vineyard above village Limbach. The production is kept to 200- 500- 700- 900 bottles depending on a variety and year.
