Alcohol: 11.5% Bottle size:75cl From a single vineyard; the Klosterschaffnerei. This site was associated with a tithe barn used by the monastery at Wadgassen in the Middle Ages to collect taxes from the Bockenheim area. Manual harvesting of 50-year-old vines after a very dry and very hot year. Mashed for 12 hours. Fermentation with wild yeasts, aged in used oak barrels for 8 months. No added sulphur. Unfiltered. Bottled in August 2019
