About: A sparkling white wine made from 100% Welschriesling, english: Italian Riesling. It’s Brut, that means there remained 7 g/l sugar when fermenting in the bottle. We did not add any sugar in the end. We named him after our nephew Moritz, because he is as refreshing as this wine. For environmental reasons, as we do with all our wines, we bottled Morizz without a capsule.   Vinification: For the base wine we hand harvested the grapes on august 28th. After a gentle pressing, the wine fermented spontaneously.  Like a champagner (Méthode Traditionnelle) the wine was filled in sparkling wine bottles on july 7th in 2018 and classically refermented in the bottle and was left to mature on its lees until april 2020. This gives it its typical champagne taste profile and the fine perlage. The duration of time on the lees is listed on the back label. The bottles were disgorged and corked by hand.    Grown, produced and bottled :  WASSMANN PINCE BT. Susann Hanauer and Ralf Waßmann, Fő utca 42, 7766 Pécsdevecser, Hungary.   Analytics: Alcohol: 12,23 % V/V. Residual sugar: 7,4 g/l. Acidity: 5,76 g/l. Contains sulphites. Total sulphur 49 mg/l.

Our south-facing vineyards lie within the boundaries of Siklós in the Villány wine-region, the southernmost Hungarian wine-growing area and the most significant one to produce red wine in the country. The cellar is situated in Pécsdevecser, a small village about 15 km north of Villány itself. We founded our wine-estate in 2002 and have been running it together since then. (We = Ralf Waßmann, who studied beverage sciences in Geisenheim (Germany) and Susann Hanauer, who was a lawyer). Our vineyards cover two hectares, planted with Olaszriszling (Welschriesling in German) and Chardonnay for white wine and Cabernet Franc, Cabernet Sauvignon, Kékfrankos (Lemberger or Blaufränkisch in German), Portugieser and Merlot for red. All our wines have Hungarian certification that guarantees origin and quality: ‘Districtus Hungaricus Controllatus Villány’ (DHC Villány). In 2003 our business became the first one in Villány to be recognised as organic wine growers, according to the EU guidelines for ecological agriculture. We have had DEMETER certification since 2011.
