Víno Hubinský is a family winery located in Vinosady, at the foot of the Little Carpathian Mountains, which is today owned and operated by brothers David and Peter. They inherited passion for growing and making wine from their ancestors. In the 1930s, their paternal great-grandfather founded his first single vineyard – “Grefty”. In the beginning of the 1940s, he poured his wines on the occasion of opening a wine tavern in his native village. The parents of the Hubinský brothers loosely followed the broken family tradition and in 1986 they founded the single vineyard “Čierna zem” (Black Earth). In the beginning of the 1990s, the Hubinský family started to do business with cask wine. The year 2004 was a turning point for them as the father, Jaroslav, handed over the wine cellar to his son David, who at that time had just finished a wine school in Modra and took over the family winery at a very young age. Two years later he was joined by his younger brother Peter. Their first vintage was 2008. The experience gained throughout the years keeps raising the quality of their wines ever higher. In the next decade they are planning to narrow down the variety profile of their grapes to six in order to be able to delve deeper into cultivation and creation of wine from these selected varieties. The philosophy of the winery is based on the high quality of grapes and the varietal character of wines in which the expression of soil, location and vintage can be felt. Careful processing focused on the nature and expression of the terroir is always a priority. The grapes are being picked by hand. The year 2018 was the 10th for David and Peter. They started with the process of spontaneous fermentation in 2016 and in 2017 this process has already been applied on most of their wines. For the rest of the wines, yeast with neutral strains has been used. In 2017, at least 80% of the protection of the vineyards was done in an environmentally friendly way. In 2018, the protection of the vineyards was 100% ecological and all of the wines were fermenting spontaneously with a goal of becoming an entirely biodynamic winery in the future. The Welschriesling - Concrete pyramid vintage 2016 is the first wine by Víno Hubinský to be bottled without filtration. In 2019, sulfur is no longer used for grapes, we have wines where sulfur has not been used at all, or where a maximum total of up to 50 mg / l is added. The year 2019 does not filter any more wine, for some wines we add Bentonite. Bentonite is a noble clay. This is due to the fact that we can also sell wines in Slovakia, because our sales would almost completely stop. In 2020, we are starting to combine the biological protection of vineyards with hand-made plant extracts. In 2020, sulfur was not used at all. From the year 2018 we have wines where the sulfur is not more than 50 mg, unfiltered and un clarified, we presented these at Karakterra 8 in 2019. In 2021, we protect vineyards only with our own extracts, we used preparation 500. Our goal is to become a biodynamic winery. We started creating our first Pet Nata in 2019, without the use of sulfur.
