Between mount MORrone and MAJella, our wineyard and olives are grown following orgnic rules, reducing as much as possible the human intervention. The vegetation between the rows is allowed to grow spontaneously and maintained to give substance and compactness to the soil, avoiding the phenomenon of erosion. The wooden supports of the rows follow the choice of using natural materials with less impact on the environment. In the vinery the grapes arrive and is processed without the use of added chemicals. The fermentation is spontaneous, without artificial temperature control, the aging is followed from day to day and only when the wine is ready, it is bottled. We love to call our wines "real", because they are made of grapes only! We produce also an excelent organic extra virgin olive oil. In the territory of Tocco da Casauria grows a cultivar unique in the world, the Toccolana or Police. Our desire is to make this uniqueness known, through the extra virgin olive oil monocultivar Toccolana MORMAJ. An ORGANIC oil obtained from freshly beaten olives, at the beginning of the ripening process, which expresses intense aromas and a balance between spicy and bitter. The two-phase cold extraction ensures the maintenance of a high concentration of polyphenols, natural antioxidants, which preserve the quality of the oil for a longer duration. During the visits in the cellar, Francesco will show you how to taste the oil and how to understand if you are facing a real extra virgin olive oil!
