Manual harvesting on the 10 October and 10% of which were dried on the plants - late harvest. 30 days of maceration in old large oak barrels. Ageing in new oak barriques for 10 months followed by 6 months in bottle. This wine is obtained from spontaneous fermentation, it's unfiltered and with the addition of 30mg/L sulphites during the bottling phase.
