Manual harvesting on the 18th semptember and placed in small cases of 15 kg. 30 days of maceration in acacia 500 liters barrels
After the first maceration, it is left for six months on the skins of Mantonico bianco, very old white variety from Calabria (like ripasso method). Ageing for 1 year in old oak barriques.
This wine is obtained from spontaneous fermentation, unfiltered and without addition of sulphites during the bottling phase.
