Our 2nd vintage, Natty Pets is a celebration of our 3 mini Sicilian donkeys (Dolce, Sofia, Luna), 4 goats (Chabi, Chou, Soleil, Trouble), 2 dogs (Arya, Austin), and 2 cats (Wiley, Max), that help on our small farm and vineyard. Its personality is dominated by the skin fermented Picpoul, that comes from our popular “Centime” orange wine (12 days on the skins). The skin fermented Picpoul (35%) is blended with Picpoul (30%) and Grenache Blanc (35%), each fermented and aged in stainless steel. The wines are blended, then chilled and slowly micro carbonated in a brite tank for 5 days to add texture, then canned.
