I don’t want to press such a small quantity into a big empty tank, so it goes to Charabia instead.“ Manual harvest. Direct pressing. Vinification with natural yeasts. Aged in vats, on the lees for 10 months. Unfiltered, racked before bottling.

Thomas became a winemaker by accident. After many travels, he discovered organic and natural wines with Benoit Courault or Christophe Daviau and realised the importance of the work in the vineyard. In 2008, he started organic farming on his own and in 2011, he inherited a compact winery and vines from his mentor. In the cellar, he doesn’t not use yeasts, and practices a minimal intervention. His wines are unfined and unfiltered.
