Hand-harvested and fermented in stainless steel. Racked 6 times during fermentation to remove the sediment. Fermented with indigenous yeast in stainless steel. Bottled before fermentation finished to create fizz (ancestral method winemaking technique) and disgorged 10 months later.
Tasting note: green apple and citrus flavours. Big aromatic notes and bright acidity.
