100 % SANGIOVESE (clone from romagna) which comes from our largest parcel (1.7 hectars). Vineyards are 25 years old, around 6000 plants farmed in spurred cordon. Soil composition is preatty similar in all our parcels and is basically made of salenitic chalk and clay. In this vineyard we are about 400 meters above the sea level. Vinification : hand harvested sangiovese, which is gently pressed and goes for a 1 night skin maceration in steel tank. it referments in bottle thanks to the must of the same vintage, wild yeast and spontaneous fermentation with no temperature control. Not filtered nor clarified. It was bottled the 3th of March 2022. 2000 bottles in total. SO2 <25 mg/L
