Chic is our funky Champenoise style, it’s a blend of Chardonnay and Durella. The Chardonnay maceretes for 8 days in anpho- ra and the the rest of Durella is added directly pressed, unfil- tered and unfined. It referments in May with grape sugar, the sec- ond fermentation takes place in the bottle and is disgorged after 12 months with a part of a special Armonia liqueur.

Our farm:

The farm was born from an idea of Andrea Pendin after years of working in the food scene and restaurant sector in Italy and abroad. An idea that since 2010 has been increasingly strengthened and shared with a team of young people with a wide range of skills that have helped the growth and have made it unique. Everything starts from an organic regenerative agriculture to produce products of the highest identity from volcanic soils. Currently we farm 17 hectares of vineyards, 2 hectares of olive trees and 2 hectares of cereals and vegetables.

Our philosophy:

Minimal intervention and continuous research; these words sum up the agronomic and enological approach for Andrea. Continuous research in the vineyard leads him and his team every year to question themselves and reconsider their approach to improve the balance between plant and soil. They believe that humans are fundamental in the agricultural process, but their work must follow the timing of nature, without forcing or altering the processes with synthetic products used in conventional agriculture. In the winery, the only distinction they make is according to the nature and structure of the soil, thanks to the blends. Even from multiple harvests of the same variety or vineyard, they obtain the best balance to get a healthier and truer expression of the wine.
