Our farm is located on the hills of Collio (Gorizia). We have about 4 hectares of vineyards, we have been making wine since 2017, we produce one type of Red (70% Merlot-30% Cabernet Sauvugnon), four types of white (Pinot Grigio, Ribolla Gialla, Riesling Italico and Sauvignon), and a Brut sparkling wine. We have been certified organic in the vineyard since 2019 and since 2021 we have started with organic certification in the cellar. All white wines (including Brut) are macerated on the skins. In the cellar, we do not use selected yeasts, only indigenous yeasts, we do not have temperature control, we do not carry out clarifications. We do the punching down 4 times a day manually. We try to make wine in the most natural way possible
