Additional Information

This wine is not degorged and can have a deposit remainder from the fermentation process in the bottle. Therefore best to open slightly chilled but not too cold. Several small process improvements were done w.r.t. our first 2020 vintage with many lessons learned. Also, 2021 saw a very warm and dry summer season, so when we had fenolic maturity of the grapes, the sugar level ended up higher, resulting in higher alcohol level. On top of that, significantly more natural sulfites were created during fermentation compared to 2020 (less added).

Our winery was officially established in 2020, with the conviction of producing wines without compromising on quality, and in full respect of natural balances. Tenuta La Fiaminga has an area of ​​almost 10 hectares, half of which is cultivated with Grasparossa grapes (the vines are 15 years old on average) and a small portion of land cultivated in Trebbiano. An ambitious project has been launched, which involves the construction of a new winery in the domain over the next 5 years. Until then, a colleague's production facilities, located at a distance of only 500 m from the vineyard, is used. We produce Lambrusco Grasparossa di Castelvetro, a sparkling wine with a ruby ​​red color. The production philosophy is entirely based on the “ancestral method” and on the “traditional method”, with the fermentation process finalized in the bottle, hence creating the sparkle. Our goal is to provide a high end qualitative product, using low intervention in vineyard and cellar, and expressing the grape variety to its full potential and avoiding "industrial" or "corrective" techniques.
