Additional Information
Albeit disgorged (à la volée), the wine can have small levels of deposit.
Several small process improvements were done w.r.t. our first 2020 vintage with many lessons learned (also for disgorgement). Also, 2021 saw a very warm and dry summer season, so when we had fenolic maturity of the grapes, the sugar level ended up higher, resulting in higher alcohol level. On top of that, significantly more natural sulfites were created during fermentation compared to 2020 (less added).
