• Manual harvested • Whole bunch • Open topped fermenter • Gentle press for three hours. • Natural settling of must • Pied de cuvee from vineyard to start ferment – no SO2 or enzymes added • 10 month ambient ferment in stainless tanks. • Natural malolactic conversion • Matured for 10 months in tanks, 5 in barrels • Malolactic fermentation TASTING NOTE: Bright pale straw yellow with touch of green hay. Slightly petrolly nose followed by the pure fruity flavour of lemon, citrus, crushed apple, pear and a bit of baked bread. A dry Riesling but the savoury yeasty creaminess brings rounded mouthfeel rather than sharp impression which this grape variety normally gives.
