Alcohol: 13.4% -Manual harvested -Whole cluster - Carbonic maceration for 19 days -Grapes are foot crushed -Natural ferment for 10 days -3 days post ferment maceration -in total 31 day cuvaison -No pump overs – gentle punchdowns or wetting cap -Free run and press juice blended in tank -Aged in barrels for 19 months before racking -25% new oak -Natural Malolactic fermentation in spring -Aged for a further 2 months in stainless tanks TASTING NOTE: Purplish garnet colour. Mushroomy earthiness, dried herbs and exotic spices of cloves, star anise and cinnamon, followed by cherry and plum compote. Very savoury wine with complexity.
