Alcohol: 13.5% Bottle size: 75cl - 150cl Sangiovese 90%, Petit Verdot 5%, Cabernet Franc 5% Age of vines: 12 years Fermenation in 25/30 hl steel tanks. Separation of stalks; natural yeasts; alcoholic fermentation with peels for 15/20 days; malolactic fermentation in wood barrels of 10-12 hl. Manual daily replacements. Aging for 12-24 months in Slavonian and French wood oak barrels and 12-24 months in bottle. Balance between alcohol and acidity; high pH that manages to keep the wine with notes of the nose of great freshness; the red fruits of Sangiovese predominate in the mouth, followed by the spicy notes of the Petit Verdot. The cabernet provides structure and harmony to the wine, also offering an intense color.

Santa10 is a firm extending for 8 hectares, 1,5 hectares of vineyards (sangiovese, petit verdot, cabernet) and 430 olive trees. It’s a vine growing firm in the municipal territory of Siena, with tuff and clay. The vineyards were planted in 2003 and the first harvest was made in 2007. Average production is 55 ql. of grapes per hectare. We follow the methods of organic farming. Vinification is made in inox tanks without selectioned yeasts in the cellar obtained in the underground of the medioeval tower of the firm. The ageing process starts with 24 months in oak barrels of 10 hl and then continues in bottles for the following 12 months (not filtered). Bottling is made especially using 1,5 l bottles for the best ageing process. We produce 7.500 bottles.
